
Pumpkin and carrot salad
Description
Perfect for everyday meals. Pumpkin salads go well with many ingredients: apples, oranges, carrots, and beets. I've always enjoyed the combination of carrots and pumpkin. However, if these vegetables happen to be especially sweet, to avoid excessive sweetness, you can add a bit of radish, for example. This makes the taste quite piquant. To prepare the pumpkin and carrot salad, we'll also need low-fat sour cream (or olive oil) and a handful of berries to your taste. Garnish optionally and serve.

Step 1

Prepare all the ingredients. Peel the carrot and the radish as well. Remove all the seeds from the pumpkin. By the way, if the seeds are whole and tasty, you can peel them, crush them, and then add them to the finished salad along with the prepared berries.

Then grate all the vegetables (on a coarse grater) into a dish or bowl.

Mix the grated carrot, pumpkin, and radish, and dress the salad. For the dressing, I combine sour cream or olive oil (depending on preference) with spices (salt, pepper, rosemary). Before serving, garnish the ready pumpkin and carrot salad with lingonberries or pumpkin seeds.
