Minimum effort — excellent result. Even if you don't particularly like Jerusalem artichoke by taste, you should still eat it at least because it's incredibly healthy. Personally, though, I've never met anyone who tried Jerusalem artichoke and absolutely disliked it. This vegetable has a very neutral flavor, so it's unlikely to cause any aversion. And when mixed with the right ingredients, it makes a very tasty salad. I recommend preparing a Jerusalem artichoke salad with carrots, cucumbers, and canned peas. The result is a delicious and, most importantly, incredibly healthy fresh salad. I think you'll enjoy it, and your body will definitely be thrilled ;) Serve immediately.

    Ingredients for Jerusalem artichoke and carrot salad: Jerusalem artichoke, carrots, cucumbers, and canned peas.

    Peel the sunchokes and carrots. If the cucumbers are old, peel them as well.

    Grate the peeled Jerusalem artichoke, carrot, and cucumber on a vegetable slicer or grater, whichever you prefer. I grate them into small strips.

    Mix cucumbers, carrots, and jicama in a salad bowl. Add canned green peas as well.
