Few vegetables can match the sunroot (another name for Jerusalem artichoke) in terms of the quantity and quality of its health benefits. Therefore, Jerusalem artichoke is a vegetable you should definitely grow in your garden (if you have one) or buy at markets or stores. It's best to prepare it not as a cooked dish (heat destroys its beneficial properties) but as a raw salad. The recipe for Jerusalem artichoke salad is below. The result is not only fantastically healthy but also very tasty and fresh—a vegetable salad I personally love and usually eat for breakfast.     First, I'll show you what raw, unpeeled Jerusalem artichoke looks like. It's something between ginger and potato.

    So, first of all, you need to prepare the ingredients—peel the carrots and Jerusalem artichoke, wash the apple.

    Peel the Jerusalem artichoke (earth pear) tubers, grate them on a medium grater, and immediately generously sprinkle with lemon juice. This is done to prevent the Jerusalem artichoke from darkening.

    Grate the carrot on a grater of similar size.

    Grate the apple in the same way. Spritz it with lemon juice as well to prevent browning.

    Now, all that's left is to mix the grated Jerusalem artichoke, carrot, and apple in a large salad bowl. Dress with vegetable (or olive) oil and, if desired, add salt to taste (I don't add salt to preserve the vitamins). Mix well—and your Jerusalem artichoke salad is ready!
