1. You can use any blue-veined cheese. The most common types found in supermarkets are French blue cheese (usually used in desserts, has a mild flavor), Gorgonzola (Italian, used in making sandwiches or desserts, sweet), and Roquefort (used in desserts, spicy). Cut the cheese into cubes. Slice the bacon into strips. Cut the lettuce head into 6 pieces. Thinly slice the onion. Dice the tomatoes. Mix mayonnaise, lemon juice, black pepper, and cayenne pepper in a medium-sized bowl. Add the blue cheese and mix thoroughly. Add buttermilk.

2. Fry the bacon in a large skillet over medium heat until golden and crispy. When the bacon has cooled, crumble it into small pieces. Arrange the lettuce leaves on a plate. Add the bacon in equal amounts to each plate. Add tomatoes and red onion.
