Beet and peach salad
Description
This salad is very tasty and unusual, with an excellent combination of ingredients. It pairs perfectly with white sparkling wines. You can use either fresh or canned peaches—both are equally delicious.

Step 1
Prepare all the ingredients. Boil the beetroot in advance until tender, let it cool and peel off the skin. Always check for doneness with a knife that has a long, thin blade. Wash and dry the spinach.

If the spinach leaves are large, chop them, then place them on a flat plate.

Slice the peaches and beets into small pieces, place them on top of the spinach.

Place pieces of cream cheese on the salad, crumble blue cheese over it, and sprinkle the salad with it. Drizzle all ingredients with extra virgin olive oil and sprinkle with pink pepper.
