
Cabbage salad with vinegar
Description
A simple dish to prepare. I make this salad specifically with red cabbage, as it has a different texture compared to white cabbage. If you can't find red cabbage, I think it can be replaced with the regular one. All the vegetables in the salad are raw, so it's very healthy, especially after a long winter when the body greatly needs vitamins. Serve chilled.

1. In a small bowl, I put olive oil, wine vinegar, maple syrup, add minced garlic, cumin (crushed into powder), a little salt and pepper, mix and set the dressing aside.

2. Peel the carrot and slice it into thin rounds (or half-moons), wash the cabbage and shred into thin strips, chop the parsley and mint. Transfer all the ingredients to a salad bowl.

3. Pour in the prepared dressing and mix, season with salt to taste (if needed).

4. At the very end of cooking, I add raw pumpkin seeds and mix once again.

5. Let the prepared salad sit for 10-15 minutes, then serve.
