It has a rich flavor and can be stored for a long time, so you can choose your favorite side dish to go with it. For example, I like serving it with rice noodles, but I think it would be just as delicious with plain Russian-style potatoes. 1. You can buy soy asparagus at specialty stores or find it in the semi-finished products section of supermarkets. It's best to soak this asparagus for at least one to two hours before cooking, changing the water periodically. 2. Let's assume you already have soaked soy asparagus. Now boil it in salted water for about 10 minutes, then rinse it with cold water and cut it as you prefer. Set it aside for now. 3. If your cucumbers have thick skin, it's better to peel them and cut into thin strips. 4. In a large bowl, mix the soy asparagus, cucumbers, and Korean-style carrot. Add finely chopped herbs and garlic. 5. Mix everything well, sprinkle with vinegar and soy sauce, then let it marinate. 6. Meanwhile, heat vegetable oil in a frying pan and sauté a piece of onion, ginger, garlic, or any spices you'd like to add to the salad. Pour this hot dressing over the salad and it's ready to serve.
