Spinach, raisin, and pine nut salad
Description
Perfect for everyday meals. I usually prepare this spinach, raisin, and pine nut salad for breakfast—it's quick and easy to make, yet highly nutritious and very healthy. Exactly what you need at the start of a working day. The recipe isn't my invention; I honestly borrowed it from a book about Spanish national cuisine. Hope you'll like it :) Good luck! Garnish as desired and serve.
Instructions
- 1
Step 1

So, let's get started. Here are our ingredients, just for clarity—although all the ingredients seem pretty obvious and well-known to everyone.
- 2
Step 2

First of all, pour boiling water over the raisins and leave them in it for about 10 minutes.
- 3
Step 3

We thoroughly wash the spinach leaves and let the water drain off.
- 4
Step 4

Cut the white bread into cubes.
- 5
Step 5

Fry the bread cubes in olive oil until a crispy crust forms (1-2 minutes), then place them on a paper towel or napkins to absorb excess fat.
- 6
Step 6

We perform a similar procedure with our pine nuts—lightly toast them and place them on a paper towel.
- 7
Step 7

We take the raisins out of the water and also place them on a paper towel to absorb excess moisture.
- 8
Step 8

Finely chop the garlic.
- 9
Step 9

Lightly sauté the garlic in olive oil.
- 10
Step 10

Add the nuts to the pan, mix, and lightly sauté.
- 11
Step 11

Next, add the spinach to the pan after the nuts. Stir and simmer for about 1 minute, maximum 2 minutes. We need the spinach slightly softened—1 minute in the pan is enough.
- 12
Step 12

Transfer the contents of the frying pan to a small plate, add raisins, and mix.
- 13
Step 13

Arrange on plates, add fried bread cubes, and season with salt and pepper to taste, or drizzle with olive oil if desired. Ready!
