
Spinach and radish salad
Description
The recipe won't take much time. In summer, when there are plenty of vegetables, I mostly eat salads. One of my discoveries this summer is a spinach and radish salad. The preparation and ingredients are extremely simple, yet it's hard to talk about the result without genuine enthusiasm :) Definitely one of the best vegetable salads I've ever tried. The combination of ingredients is simply perfect. Give it a try and serve it at the table.

Ingredients.

First, prepare the marinade: mix vinegar, salt, and sugar. Stir well until the sugar is completely dissolved.

Wash the radish and slice it into thin rounds.

Place the radish in the marinade we prepared and let it sit for 30-60 minutes (preferably 60, but 30 will suffice if you're in a hurry).

After the specified time, remove the radish from the marinade. Do not discard the marinade—3 tablespoons will be needed for the salad dressing.

Mix 3 tablespoons of marinade, olive oil, and pepper. Add a little salt if desired. Stir well.

Finely chop the washed parsley, cut the eggs into quarters.

Mix spinach with the dressing.

Place spinach on individual serving plates, put radish slices on the spinach, garnish with herbs on top, and arrange the eggs around the edges. :)
