
Herring salad
Description
The recipe won't take much time. I baked the potatoes and beets for the salad in the oven, wrapped in foil. The cranberries add a pleasant tangy flavor. Replace the pear with a sour apple if necessary. Overall, it's a very tasty and interesting salad. Serve it at the table.

1. Cut the potatoes into small cubes.

2. Grate the beet on a coarse grater.

3. Finely dice the white and blue onions. Pour boiling water over them in separate containers for a couple of minutes, then drain the water.

4. Peel the pear, cut into small cubes, and divide into 2 parts.

5. Finely chop the herring fillet and add lemon juice.

6. In a bowl, combine the potatoes, herring, white onion, and pear. Add white pepper, a pinch of salt, sour cream, and mayonnaise. Mix all the ingredients and refrigerate.

7. In a heavy-bottomed pot, place the second part of the pear, cranberries, and sugar. Caramelize over low heat until soft. Then add the beetroot, red onion, a pinch of salt, white pepper, and olive oil. Mix well and refrigerate for 2 hours together with the herring.

8. Arrange the salad on a flat plate, alternating herring and beet. Garnish with parsley leaves and serve.
