
Arugula salad with rice, cucumber, and sun-dried tomatoes

Perfect for everyday meals. I really love Italian cuisine, especially salads, where Italians can combine whatever they like. And it always turns out delicious, don't you agree? I never would have thought to mix greens and rice, would you? But after trying this salad just once, I now prepare it quite often—it's a hit with everyone. Make it and try it yourself; the recipe is very simple and the salad is quick to prepare. Garnish as desired and serve.

1. Rinse and dry arugula leaves, then place them in a salad bowl.

2. Chop the green onion scallions and dill. You can use any aromatic herbs: basil, cilantro, parsley.

3. Cut the fresh crisp cucumber into cubes.

4. Slice the sun-dried tomatoes (I have my own, but they were stored in the refrigerator and the olive oil has solidified).

5. Add the previously boiled rice. I used unpolished rice, which is perfect for this salad. The rice can be added cold or warm.

6. For the dressing, mix the oil from the sun-dried tomatoes (mine is with aromatic herbs and garlic) and lemon juice.

7. Pour the dressing over the salad, mix well — and you're ready to enjoy your meal :)
