
Lentil sprout salad
Description
The salad itself is quick to prepare, but to make it, sprout the lentils in advance. You can sprout them in various ways; I usually just spread them in one or two layers on a plate, pour a little water over them, and leave for about 12–15 hours. Also, to make the salad with sprouted lentils, we'll need tofu, although it can be substituted with brined cheese or feta.

First, you should sprout the lentils. To do this, rinse them first.

Place the lentils on a plate, add a little water or simply cover them with a damp cloth, and sprout the lentils for about 12 hours. Rinse the lentils occasionally to prevent mold. When sprouts of 0.5 cm appear, the lentils are ready.

Prepare the remaining ingredients.

Wash the Chinese cabbage or lettuce and tear it into large pieces by hand, place on a plate. Thinly slice the cucumbers and add to the salad.

Next, finely chop the tomato; you can even puree it, although this is not necessary.

Add finely chopped dill.

Add sprouted lentils.

Dice the tofu and add it to the salad. Season with salt and pepper to taste, sprinkle with lemon juice, and dress the salad with olive oil. Your sprouted lentil salad is ready to serve.
