
Tomato and bean salad
Description
The salad is quick and easy to prepare. Canned beans are a wonderful thing. When I go to relax at the cottage in summer, I always take a can with me. Combining canned beans with any fresh vegetables makes a fantastic salad—on one hand, it's light (after all, it's vegetables), and on the other, filling (beans are no joke). One of my favorite variations is a tomato and bean salad. When fresh tomatoes ripen, I always make it. It's especially delicious outdoors. Do try it—I'm sure you'll love this tomato and bean salad too ;) By the way, this salad is not only tasty but also healthy. It's particularly good for diabetics—nothing forbidden here; on the contrary, both tomatoes and beans in reasonable amounts are actually beneficial for this condition. The salad is ready to serve.

Step 1

Wash the tomatoes and cut them into small cubes.

In a bowl, mix the chopped tomatoes and canned beans (without liquid).

Chop the green onion into small rings.

Finely chop the fresh herbs (I used parsley and basil) and add them to the salad together with the green onion.

Mix lemon juice, olive oil, salt, and pepper.

Dress the salad with the resulting mixture.
