
Barley salad with tomatoes
Description
The recipe won't take much time. A less festive version of this salad includes barley and tomatoes, while seafood can be added for a festive touch. To prepare the barley salad with tomatoes, cook the barley until done, but avoid overcooking it. You can use regular tomatoes or cherry tomatoes. I used small octopuses, salted in brine. Instead of octopus, you can use mussels or shrimp; squid is also a perfect choice. Serve immediately.

Wash the tomatoes and cut them into slices.

Finely dice the onion.

Cut the celery into cubes as well, but slightly larger in size.

Chop the parsley.

Finely chop the garlic.

Cook the barley until done.

Mix the barley with onion and celery.

Heat a frying pan, add oil, and sauté garlic until golden and fragrant.

Add the octopus, lemon juice, and one-third of the parsley to the sautéed garlic.
