
Salmon salad
Description
For the bed, I use arugula, which can be replaced with any salad greens. It turns out that boiled salmon and sweet peaches make a very successful combination. This salad is perfect even for a festive occasion. You can make a single portion to try, but I assure you, you'll like it.

Pour 6 cups of water into a frying pan, add 1 slice of lemon, black peppercorns, a little salt and ground pepper, bring to a boil and add the pieces of fish.

Cover the pan with a lid and cook the fish for 5-8 minutes, then carefully transfer the fish to a plate.

For the dressing, mix lemon juice and zest, vegetable oil and mustard, salt and ground pepper, then whisk everything together.

Wash the arugula and basil leaves, divide into 4 portions. Add chopped pistachios and small cubes of avocado, mix well.

Place a piece of fish in the center and a slice of lemon next to it. Wash the peaches and slice them thinly, arrange the slices around the fish on the plate, drizzle with dressing, and serve.
