
Garlic leaf salad
Description
The recipe won't take much time. This salad can be made using either cultivated garlic or wild garlic, better known as ramsons. The latter also contains a wealth of beneficial substances—no wonder it's known in Germany as bear garlic: bears, awakening from winter hibernation, feast on ramsons and quickly regain their strength thanks to the high content of vitamin C, mineral salts, protein, carotene, and other nutrients in its leaves. In spring, we turn into bears ourselves—whenever the tender green shoots of garlic emerge from the ground, we head out "to graze," now in the forest, now in the garden. We often use this recipe for garlic leaf salad—it's not only delicious on its own, but also makes an excellent side dish for any meat. Hope you'll find it useful too. Serve at the table.

Step 1

Wash the potatoes and boil them in their skins.

Boil the eggs hard.

Wash the garlic and onion greens thoroughly and dry them.

Cut with a sharp knife.

Cut the cooled potato as well—finer or coarser, as you prefer.

Chop the eggs with a knife or grate them on a coarse grater.

Place the potatoes and eggs in a dish with the herbs, add sour cream.
