
Kamchatka salmon couscous salad
Description
The recipe won't take much time. You can serve the salad without a side dish, as it already contains couscous. If you decide to add a side, I recommend, for example, vegetables (fresh or roasted)—asparagus beans, cauliflower purée, or green pea purée. Serve the dish immediately after preparation. Bring it to the table.

Step 1
Peel the carrots and grate them on a coarse grater. Wash and chop the spinach, and slice the green onions into strips.

Remove the bones and skin from the salmon, then break it into small pieces.

Place the fish, carrots, spinach, couscous, green onions, chili powder, lemon zest, and juice from half a lemon into a bowl and mix well.

Heat the broth well and pour it over the contents of the bowl, mix and let it sit for 5 minutes, cover the bowl with foil.

Remove the foil, garnish the salad with chopped walnuts, mix once again, and serve.
