
Shrimp salad with quail eggs
Description
To prepare shrimp salad with quail eggs, I recommend using large shrimp—they're needed in small quantity, but they look impressive and pair well with the eggs. For example, use tiger shrimp or king shrimp. Quail eggs cook very quickly, so they're easy to prepare: put them into already boiling water and cook for 2–3 minutes.

Prepare all the necessary ingredients. Wash and dry the lettuce, and hard-boil the eggs.

Wash the salad leaves, dry them, and tear them into large pieces by hand. Place them neatly on a plate. By the way, you can use a mixed salad—this will be more interesting and tastier, especially if you're a fan of greens.

Boiled quail eggs cut in half and place on top of salad leaves.

If necessary, squeeze the mozzarella to remove excess liquid. Cut the balls in half and add to the salad with the eggs. You can also use regular block mozzarella, which should simply be cut into cubes.

Wash the cherry tomatoes and cut them in half as well.

Sauté the shrimp in olive oil on a preheated skillet (2 minutes on each side).

Add the shrimp to the salad, and just before serving, drizzle with lemon juice, then season with salt and pepper to taste. For a festive version, you can also add some pine nuts.
