
Beet salad for winter
Description
Perfect for everyday meals. When guests come to me, they always ask if there's red beet salad for winter. This delicious appetizer can serve as a side dish or even as a borscht topping, but it can also be enjoyed as a standalone dish. Preparing red beet salad for winter takes about 1.5 hours, and the most labor-intensive part is chopping the vegetables. If you have a food processor, it will make the task much easier. Garnish optionally and serve.

1. It's best to use a Korean-style vegetable shredder for this salad. I used the attachment in my food processor, taking advantage of modern technology. Manually processing such a large quantity of vegetables would be more difficult.

2. Take a pot in which you will stew the vegetables and pour in some vegetable oil. Then add half of the beets and sprinkle with sugar. Once the beets release their juice, add the remaining beets, and later the carrots. Simmer, stirring constantly.

3. Add the chopped tomatoes and continue simmering. Add salt to taste.

4. Press the garlic through a garlic press or grate finely. Add it at the very end, and finish by adding chili pepper to taste to the vegetables.

5. When the vegetables are ready, add the vinegar essence and simmer for another 10 minutes.

6. Place the salad into sterilized jars and seal them.
