
Quinoa salad with squid
Description
A simple dish to prepare. This salad can surprise and satisfy even true gourmets. The salad turns out juicy, light, and fresh-tasting thanks to the mint, making it especially appealing to women. Rinse quinoa thoroughly until the water runs clear, as otherwise the grains might taste bitter. Also, avoid cooking quinoa for too long, or the grains will lose their crunch and become mushy. Use small, firm tomatoes—cherry tomatoes are ideal. Serve chilled.

Prepare all the necessary ingredients for making quinoa salad with squid. Sort through the mint and lettuce leaves, rinse and dry them. Defrost the squid, clean if necessary, and wash the tomatoes.

Rinse the quinoa and drain in a colander to remove excess water. Pour water into a saucepan and bring to a boil over medium heat. Add the quinoa to the saucepan, cover with a lid, and reduce the heat. Cook the quinoa for 15–20 minutes, until all the water is absorbed. Remove the saucepan from the heat and let it stand, covered, for another 5 minutes. After that, cool the quinoa completely.

Prepare the mint dressing. Finely chop the mint leaves and place them in a bowl.

Add salt, black pepper.

Pour the lemon juice and vegetable oil over the mint, then mix. Let the dressing sit for 10-15 minutes.

Dry the prepared squid with a paper towel. Pour vegetable oil into a pan and heat over medium heat. Place the squid in the pan and fry for one minute, then transfer to a plate and let cool.
