
Potato and corn salad
Description
Minimum effort — excellent result. Let the salad sit for 30–60 minutes before serving, so the potatoes can absorb the dressing. You can use mayonnaise for dressing, or a lower-calorie alternative such as sour cream or yogurt. This salad is quite filling, so you can serve it separately, for example, with grilled meat. It can also be served immediately.

1. Wash the potatoes, place them in a pot with water, put the pot on the stove, and boil the potatoes until cooked.

2. Remove the potatoes from the water and cool, then cut into small pieces.

3. Transfer the potatoes to a bowl, add olive oil, mix and let stand for 20 minutes.

4. Meanwhile, fry the bacon strips in a dry skillet, then break the crispy bacon into pieces.

5. Add bacon, canned corn, chopped pepper, half of the required amount of chopped green onion, garlic powder to the potatoes, and mix.

6. Dress the salad with sour cream and yogurt, mix well.

7. Add the remaining green onions to the salad, refrigerate for 30-60 minutes. Serve the salad chilled.
