
Cabbage salad with vinegar
Description
The salad is quick and easy to prepare. Cabbage salad with vinegar was arguably the most popular dish in Soviet canteens, and it's still commonly found in Russian public dining establishments today. However, not everyone succeeds in making a similar cabbage salad with vinegar at home, as there are a few tricks to preparing this salad properly. If done right, the cabbage will turn out soft, tender, and with a slight tang of vinegar. By the way, this salad is great for diabetics—cabbage contains almost no carbohydrates. Good luck! Finely chop the cabbage.

Put the cabbage in a bowl and pour boiling water over it. Cover with a lid and leave in the boiling water for 20 minutes.

Drain the cabbage in a colander and let the water drip off. Place the cabbage in a salad bowl.

Pour vegetable oil and vinegar into the cabbage, mix well.

Add salt and sugar to taste, mix thoroughly once again, and let it steep for at least 10–15 minutes—so the cabbage can absorb the vinegar. Then the salad can be served.
