Zucchini and walnut salad
Description
A simple dish to prepare. In my opinion, this is a very original recipe. I'm sure that if you serve it at a festive table, no one will have ever tasted anything like this appetizer before. The zucchini and nut salad is an interesting, somewhat unconventional dish, but don't be afraid—cooking is a form of creativity after all :) If you have zucchinis lying around at home, grab this photo recipe and head to the kitchen. This salad is excellent for diabetics, as raw zucchinis are a highly effective means for preventing and combating diabetes. Good luck! Serve chilled.
Instructions
- 1
Step 1

Peel the zucchini and use a vegetable peeler to slice it into thin zucchini strips. Kind of like chips. Refer to the photo for clarity.
- 2
Step 2

Marinate the zucchini in a mixture of olive oil, wine vinegar, salt, and pepper. Let it marinate for at least 20 minutes.
- 3
Step 3

Zucchini should be stirred occasionally to ensure they are completely soaked in the marinade.
- 4
Step 4

We drain the marinade, slightly squeeze the zucchini to remove excess marinade, and place them onto a serving dish. Sprinkle with walnuts (or any other nuts you have on hand) — and serve!
