This simple recipe for a fried chanterelle mushroom salad is exactly one of those improvisations—it appeared completely by accident, but later became one of our family's favorite dishes. There's nothing complicated here: just sauté the meat, then the mushrooms, mix everything with arugula, and your salad is ready. By the way, it turns out quite filling and nutritious, and for extra juiciness, you can add cherry tomatoes or regular tomatoes. But personally, I prepare it this way, and I also recommend you try making this fried chanterelle mushroom salad at home—it won't take much time. Garnish as desired and serve.

So, prepare everything needed, thoroughly wash the mushrooms and arugula. Choose meat with marbled fat; otherwise, your salad will turn out too dry.

Cut the meat into strips or cubes, coat in flour, and fry in well-heated vegetable oil until a crispy crust forms; season with salt and pepper.

Separately sauté the chanterelles in a pan until excess moisture evaporates from the mushrooms; season them with salt and pepper as well.
