
Mushroom and bean salad
Description
Perfect for everyday meals. Using these ingredients, I created my healthy recipe. An Asian-style salad served warm. In China or Vietnam, it's common to have warm salads that are filling enough to replace a main course. If you're curious, read on. Garnish as desired and serve.

In a heavy-bottomed saucepan, heat the oil. Add finely chopped onion and garlic. Cook, stirring, for 2–4 minutes, adding salt and pepper. Then pour in the water and add the cooked beans. Bring the water to a boil, then simmer the beans for about 25 minutes until tender.

Meanwhile, in a frying pan with heated oil, sauté the mushroom slices for 2–4 minutes, stirring. Don't forget to add salt and pepper. Use paper towels to remove excess fat.

Add the chard in pieces to the saucepan. Continue cooking, stirring, for 5 minutes. Season the ingredients with salt and pepper.

In a bowl, mix the mushrooms with chopped tarragon and corn. Add vinegar and a little oil.

Combine the mushroom mixture with the bean mixture, draining the water from the pot. The warm salad is ready!
