
Glass noodle salad with squid
Description
Perfect for everyday meals. You can add fresh cucumbers to the salad without heat treatment—it will be even fresher. Garnish to taste and serve.

Salad ingredients.

Thoroughly clean the squid, removing the thin inner membrane. Boil the squid in salted and slightly acidified water. Place them in boiling water and cook for about 3 minutes after the water comes back to a boil. Cool down.

Prepare the glass noodles according to the instructions on the package. Drain thoroughly.

Peel the vegetables and slice them very thinly into strips. Alternatively, use a Korean grater. Finely chop the garlic or press it through a garlic press.

Cut the squid into thin strips and place in a bowl.

Heat the vegetables in oil for just a couple of minutes, stirring. You only need to enhance their aroma and color and let them soften.

Place the cellophane noodles on the squid, then top with hot vegetables. Sprinkle with chili pepper and spices.

Separately, thoroughly mix the soy sauce with sugar and rice vinegar. Aim for a balanced flavor.
