
Melon and nectarine salad
Description
The recipe won't take much time. Nectarines and melons are quite juicy, so they quickly start releasing juice, making the salad watery. However, a sauce resembling the consistency of kissel prevents this from happening. You can use any light-colored juice without sugar to preserve the natural color of the fruits and melon. Melon juice works perfectly. If you use juice with sugar, add it to taste. Mint complements the salad wonderfully with its aroma, but if you don't like it, simply omit it. Serve at once.

Prepare all the necessary ingredients for making melon and nectarine salad. Wash the melon and nectarines, then dry them. Remove the seeds from the melon and cut off the rind.

Pour apple juice into a saucepan, add sugar, cornstarch, and mix.

Place the saucepan over low heat and, stirring, bring the mixture to transparency and thickening. Separate the mint leaves from the stems, finely chop, and mix in. Cool the sauce completely, covering the surface with plastic wrap.

Cut the nectarine in half, remove the pit, and slice into wedges. Place the nectarine in a salad bowl.

Remove the seeds from the melon, cut off the rind, and slice into pieces. Add the melon to the nectarines.
