
Lentil salad with carrots
Description
You can omit the smoked chicken from the salad if you wish. By the way, for those who enjoy raisins, I recommend adding a little to the salad. I often do this, although my family isn't particularly fond of them and picks them out :) So, to prepare the lentil salad with carrots, follow these instructions: 1. Rinse the lentils several times in cold water. Soak them for half an hour to an hour. Cook them in the same water in which they were soaked, in a saucepan. Don't forget to add a pinch of salt. You can also add a bay leaf. Cook for 10–15 minutes, until tender. 2. Peel and finely chop the onion. 3. Peel the carrot and grate it on a coarse grater. 4. Sauté the onion and carrot in vegetable oil on a skillet over medium heat until golden brown. 5. Cut the smoked chicken and pepper into small pieces. 6. Mix the sautéed vegetables, cooked lentils, pepper, and chicken. Season with salt and pepper to taste. 7. Squeeze fresh lemon juice over the salad. Mix well. 8. The salad is essentially ready; just let it cool down and absorb the juices before serving.
