
Bulgur salad
Description
If you add bulgur—a specially processed wheat grain—to tomatoes, cucumbers, and greens, you get a very tasty salad. Bulgur also pairs well with meat and fish. This salad can be served either as a side dish or on its own.

1. In a heavy-bottomed pot, heat vegetable oil and add the bulgur. Stir with a wooden spoon until the grains are toasted and have absorbed all the oil. Remove the pot from heat, pour in boiled water, and return it to the stove. Cook covered for 10-15 minutes until all the water has evaporated. Remove from heat and let cool.

2. Wash the vegetables. Peel the cucumber and cut it into small cubes, and do the same with the tomatoes. Finely chop the herbs.

3. Transfer the cooked bulgur to a salad bowl. Add the herbs and vegetables. Mix everything together, then add vegetable oil and lemon juice.

4. To the bulgur, add fried meat or fish (optional).
