
Avocado salad with shrimp
Description
The salad is quick and easy to prepare. It's great served in tartlets, but you can also serve it in a regular salad bowl. Today, I'll be serving it on fried wonton wrappers (Chinese dumpling wrappers). If that's too difficult or you can't find this type of dough, you can use regular chips, thin crepes, or tartlets. The salad is ready to serve.

1. I start the preparation with the shrimp: I have peeled and vacuum-packed ones, so I wash them thoroughly, remove the tail and vein, then pat dry with paper towels. I mix 2 tablespoons of olive oil, salt, and pepper, and coat the shrimp with this mixture. I preheat the oven to 220 degrees, arrange the shrimp on a baking sheet, and bake for 10 minutes.

2. For the sauce: place ¾ cup of mayonnaise in a bowl, add finely chopped dill, wine vinegar, juice of one lime, and finely chopped red onion. Mix well.

3. I take the shrimp out of the oven and leave them to cool completely.

4. I place the cooled shrimp into a bowl, add the prepared sauce, and mix.

5. Cut the avocado in half, remove the pit, peel off the skin, dice the flesh, and add the avocado to the shrimp.

6. I had dough for Chinese dumplings (refrigerated). I cut each sheet diagonally.

7. I fry the dough on a hot skillet with the addition of sunflower oil, then immediately transfer it to a paper towel to absorb the excess fat.
