
Georgian beet salad
Description
Perfect for everyday meals. In Georgia, people love using plenty of spices, herbs, and bold flavor combinations. In addition to its excellent taste, this salad is also very healthy and diet-friendly, as not a single gram of sunflower oil is used in its preparation. The dish has a spicy and refreshing flavor thanks to the inclusion of onion and hot pepper. Garnish as desired and serve.

Step 1

1. I wash the beet, place it in a pot, cover with cold water, and boil until cooked. Then I remove it and peel off the skin. I grate the cooled beet on a coarse grater.

2. Wash the dogwood and transfer it to a saucepan, pour in two glasses of water, cover with a lid and place over heat. After boiling, remove the lid and simmer for 20-25 minutes.

3. After the cooking is finished, I remove the cornel from the heat and let it cool at room temperature.

4. I rub the cooled and cooked dogwood berries through a sieve, leaving a few berries aside for garnish.

5. Peel 2 onions and finely dice them.

6. I wash half of the bunch of parsley and cilantro, dry it with a paper towel, then chop it finely with a knife.

7. I transfer the grated beet to a bowl, then add herbs, mashed cornel berries, and onion.

8. Mix all ingredients, season to taste with salt and add ground red pepper, let the salad marinate for 10-15 minutes.
