Bean salad (vegan)
Description
Perfect for everyday meals. If you think a vegetarian dish can't be delicious, try making this salad. You'll be surprised how few ingredients are needed to create a filling, light, and appetizing dish—just vegetables and a bean-based sauce. This salad is ideal as a hearty snack or dinner, as it's rich in protein. Lemon juice in the sauce can be replaced with apple cider or regular vinegar, and a bit of sugar can be added. The sauce has a consistency similar to thick sour cream, but you can make it thinner by adding a little bean cooking liquid. Garnish as desired and serve.
