Instructions

Step 1

Take a chicken or any part of it. Boil until fully cooked and let it cool. Separate the meat from the bones. Cut the fillet into small pieces. Arrange them in a layer on a large plate. Spread a layer of mayonnaise on top.

Step 2

Finely chop the onion. Sprinkle it over the layer of chicken with mayonnaise. Take out the mushrooms. You can use fresh ones and boil them first. But I use ready-to-eat sliced mushrooms, which are sold in tin cans. They have a rather bland taste, which is exactly what I appreciate. Pickled marinades overpower the mushroom flavor with vinegar. Place a layer of mushrooms on top of the onion.

Step 3

Boil the eggs. Place them in cold water and add a teaspoon of salt. This is necessary if the eggs are store-bought and have thin shells. If such an egg starts bubbling, it might crack. I usually boil eggs for 10 minutes after the water starts boiling. After that, I place them in cold water for about 5 minutes. Now they can be peeled. Chop the eggs and spread them over the mushroom layer. Reserve some eggs for the turtle's head.

Step 4

Now we need cheese. I use hard Russian cheese. Grate it on a coarse grater. You can sprinkle the egg layer with cheese right away and then cover it with mayonnaise. But I do it this way: I mix the cheese with mayonnaise and use this mixture to cover the salad's top layer. Some of the cheese, just like some of the eggs, will go on top. Mix everything with mayonnaise and shape it into a ball on a plate. If you don't have enough cheese and eggs, to save on ingredients, place a potato inside the ball, coating it with the mixture.

Step 5

We'll need a blender. If you don't have one, use a mortar. Put the nuts in it—any kind will do; I used walnuts. Grind them into crumbs and sprinkle over the salad. Wash the prunes and cut them into thin strips. Arrange them on top of the salad to resemble a turtle shell. I make hexagon shapes like these. Now create the eyes and mouth of our turtle on the head. Decorate around the edge with dill. That's it, ready!
