
Salad with Croutons
Description
The recipe won't take much time. A bit of wheat bread, a piece of Parmesan cheese, and romaine lettuce leaves—that's practically all the ingredients that the creator of the famous Caesar salad, Caesar Cardini, had on hand when unexpected guests arrived at his restaurant. The resourceful Italian had no choice but to mix it all together, dressing it with a sauce he made himself. And so, the classic Caesar salad with croutons was born. Today, there are hundreds of "variations" of this salad. If desired, you can add boiled, fried, or baked chicken, ham, seafood, mushrooms, but all this is acceptable only if you already know the original. Serve at the table.

Cut the loaf into pieces approximately 1x1 centimeter. It's better to remove the crust.

Place on a baking sheet, spray with oil, and bake in the oven until golden brown.

Wash the lettuce leaves thoroughly and dry them.

Squeeze the lemon juice.

Grate the Parmesan.

Separate the yolks from the whites.

Grind garlic with salt and pepper. Add mustard, egg yolks, sugar, and lemon juice. Beat well. Gradually, while continuing to beat, add the oil. The result should be a light yellow sauce of medium consistency.

Toss the lettuce leaves with the sauce and mix. Add the croutons and drizzle with the remaining sauce. Sprinkle with grated Parmesan. Serve immediately.
