
Salad with mayonnaise
Description
Perfect for everyday meals. In our country, we have a special relationship with this sauce — we love it with such genuine and devoted affection that the French probably can't even dream of. Yet, unfortunately, we don't produce real mayonnaise here. And even if we did, it would likely be very expensive. Making this sauce at home, however, is quite affordable — you'll need just a cup of oil, one egg, half a lemon, and a little mustard. The whole process takes no more than 5–10 minutes — it would take longer to run to the store for that powdered substitute mayonnaise in packets :). And the taste... Well, there's simply no comparison. So I highly recommend trying the "Caesar" salad recipe with homemade mayonnaise — you won't regret it! ;) Garnish as desired and serve.

Step 1

Cut the crust off the baguette, then tear the crumb into pieces by hand or cut into small chunks. Place on a baking sheet, drizzle with oil, and bake in the oven for 7–10 minutes, until golden brown.

Wash the lettuce leaves, dry them, and tear each leaf into 2-4 pieces by hand.

Grate the Parmesan cheese on a grater.

Squeeze the juice from half a lemon.

Separate the yolks from the whites.

Prepare homemade mayonnaise. To do this, whisk egg yolks at room temperature with salt, pepper, and mustard. Add 0.5 tablespoon of lemon juice. Whisk. Gradually, drop by drop, while continuing to whisk, add half of the oil. Add the remaining lemon juice and oil. Whisk until a smooth, homogeneous mixture is obtained.

Toss the salad leaves with mayonnaise and mix. Add croutons, drizzle with several tablespoons of mayonnaise. Sprinkle with grated Parmesan and serve the salad while the croutons are still crisp and haven't absorbed the sauce yet.
