
Salad with chicken breast

Minimum effort — excellent result. No matter what the esteemed naked chef says, I still prefer chicken breast over thighs — yes, thighs are softer and more tender, but in my opinion they contain too much fat. Plus, the quality of chicken thighs sold in our stores leaves much to be desired — just imagine a chicken strutting around on such massive legs, it's terrifying! If you met one in a dark alley, you'd be scared stiff. But setting jokes aside, chicken breast is definitely a diet-friendly ingredient. It's perfect for "Caesar" salad — the key is to cook it properly. That means heating the pan and oil just enough so the meat quickly sears, forming a crust that seals in the juices without burning. Actually, there's nothing particularly difficult about it — it's just a matter of practice. I'm sure that if you like my recipe for Caesar salad with chicken breast, you'll manage to cook the chicken just right. You can serve it immediately.

Separate the chicken breast from the bone, lightly pound it, season with salt and pepper, and refrigerate for half an hour.

Remove the crust from the loaf. Tear or cut the crumb into pieces, place on a baking sheet, spray with oil, sprinkle with salt, and bake until golden brown.

Heat the skillet with oil thoroughly and quickly sear the chicken breast on both sides until golden brown. High temperature is necessary to "seal in" the moisture inside the meat, ensuring it stays juicy and not dry.

Grate the Parmesan.

Squeeze the juice from the lemon.

Lower the eggs into boiling water for 1 minute. Remove and cool.

Peel a garlic clove and crush it with salt and pepper. Add mustard, lemon juice, and eggs, and whisk thoroughly. Gradually, literally drop by drop, add olive oil. Continue whisking until the sauce becomes smooth and reaches the consistency of thin sour cream.

Wash the lettuce leaves, dry them, and tear by hand. Pour over the sauce and gently mix.
