Chicken salad with mayonnaise
Description
Perfect for everyday dining. The classic dressing for this salad is a sauce very similar to mayonnaise: it's also made with eggs and oil, but includes specific additions like garlic and Worcestershire sauce. The latter ingredient is hard to find locally, so it's no surprise that "Caesar" salad is most often prepared with regular mayonnaise. However, I'd like to warn you against using commercially bottled sauces labeled as such—they bear no resemblance to real mayonnaise! So, better spend 10 minutes of your time making authentic mayonnaise; with it, your "Caesar" will become a true culinary masterpiece! The chicken makes the salad more filling, which will surely appeal to men ;) Now, let me tell you how to prepare Caesar salad with chicken and mayonnaise. Garnish as desired and serve.
Instructions
- 1
Step 1

Rub the chicken meat with salt and pepper. Place in the refrigerator for half an hour.
- 2
Step 2

Prepare croutons. To do this, remove the crust from the baguette.
- 3
Step 3

Cut the bread crumb into pieces approximately 1x1 cm. Place on a baking sheet, sprinkle with salt, drizzle with oil, and bake in the oven for 7-10 minutes.
- 4
Step 4

Lightly pound the chicken and quickly sear it in a small amount of oil on a well-heated skillet.
- 5
Step 5

Separate the yolk from the white.
- 6
Step 6

Prepare mayonnaise: mix a room-temperature egg yolk with salt, pepper, and mustard. Add a spoonful of lemon juice and whisk. While continuing to whisk, gradually add half of the oil, drop by drop. Then add the remaining lemon juice and oil—now you can pour it in a thin stream. In the end, you'll get a thick, aromatic homemade mayonnaise!

Step 7

Wash the lettuce leaves, dry them, and tear by hand.

Step 8

Drizzle with mayonnaise and mix. Place the chopped chicken and croutons on top, then drizzle with mayonnaise again. Sprinkle with grated Parmesan and serve!
