
Classic chicken salad
Description
A simple dish to prepare. The salad is not named after Julius Caesar, but after the man most commonly credited with inventing it—Caesar Cardini, an Italian-American chef. Actually, there's nothing complicated about it. Serve chilled.

Wash and dry the chicken fillet. The meat should be dry. Wet meat will steam rather than fry when cooking. Cut the meat into small pieces. I prefer to cut it into strips.

Cut a piece of baguette into small cubes, removing the crust beforehand. If you leave the crust on, it will brown more during baking, may even burn, and become too tough.

Wash the salad leaves and tear them by hand. Place them on a plate.

Grate the hard cheese on a grater.

Prepare the sauce for the "Caesar" salad. If you don't have time, you can buy ready-made sauce at the supermarket. I make my sauce based on sour cream, adding a Caesar dressing spice mix to it.

Toast the croutons in the oven. Place the cooled croutons on the lettuce leaves. Do not use hot croutons, as they will wilt the lettuce.

Sauté the chicken fillet in vegetable oil, season with salt and pepper. Place the cooled fillet on lettuce leaves.

Drizzle the salad with Caesar dressing. It's not necessary for the dressing to cover every piece of the salad. Distribute it according to your preference.

Serve the salad at the table, garnished to taste. The salad can be mixed right at the table. If preparing Caesar salad in portions, each person can decide exactly how they'd like to eat it. For sauce lovers, serve a little extra sauce on the side.
