Salad with squid
Description
The salad is quick and easy to prepare. The classic "Caesar" recipe is often enhanced with various additions—chicken, ham, bacon, different vegetables, and even fruits. Seafood is also commonly added to this salad—shrimp, crab meat, caviar... In my opinion, one of the best options for seafood lovers is a simple Caesar salad with squid. It won't take much time or effort, and the dish will turn out truly impressive. The main thing is not to overcook the squid so they retain their tender texture. Other than that, even a child could handle it. The salad is ready to serve.
Instructions
- 1
Step 1

Wash the squid bodies, clean them out, and boil in salted water until cooked. Do not overcook, otherwise the squid will become rubbery! Slice the cooked meat into thin strips.
- 2
Step 2

Cut the crust off the baguette. Tear the crumb by hand or slice it, place on a baking sheet, spray with oil, and put in a preheated oven for a few minutes until the croutons turn golden.
- 3
Step 3

Squeeze the juice from the lemon.
- 4
Step 4

Lower the eggs into boiling water for 1 minute, then cool them down.
- 5
Step 5

Peel the garlic and mash it with salt and pepper. Add mustard, eggs, and lemon juice, and beat well. Without stopping, continue whisking the sauce with a whisk or mixer at low speed, gradually adding the oil drop by drop. The result should be a smooth sauce with the consistency of thin sour cream.

Step 6

Wash and dry the lettuce leaves, then tear them by hand.
- 7
Step 7

Dress with sauce and gently mix.
- 8
Step 8

Place strips of squid and croutons on lettuce leaves, pour with the remaining sauce, sprinkle with grated Parmesan, and serve!
