
Cherry salad

As many people, as many Caesar salad recipes – this statement isn't much of an exaggeration. Caesar can be made with practically anything – there are countless variations! But if you're watching your health and figure, it's best to choose the least caloric additions for this salad. Cherry tomatoes are a perfect choice! They not only add flavor variety, but also enhance the dish's appearance – bright red cherry tomato dots on a yellow-green bed of greens, sauce, and grated Parmesan look so appetizing that it's almost impossible to resist! :) So, let's prepare Caesar salad with cherries.

Step 1

First of all, we need to prepare the croutons. To do this, cut the crust off the baguette and tear the crumb by hand or cut into small cubes. Place on a baking sheet, spray with oil, and bake in the oven for 7–10 minutes.

We will wash the lettuce leaves under running water and dry them. Tear them by hand.

Squeeze the juice from the lemon.

Grate the Parmesan cheese on a grater.

We will lower the eggs into boiling but not bubbling water for 1 minute, then cool them.

Rub the garlic with salt and pepper. Add mustard, eggs, sugar, and lemon juice, and whisk well with a whisk or mixer at low speed. Without stopping the whisking, gradually add the oil. And the sauce for "Caesar" is ready!

We will wash the cherries and cut them in half.

We will dress the lettuce leaves with sauce and mix. Add croutons and halved cherry tomatoes, pour over the remaining sauce, and sprinkle with grated Parmesan.
