However, a certain tradition does exist, and it's worth mentioning. What does home-cooked food mean to most people? It's tasty, fresh, natural ingredients. It's dishes prepared with soul, infused with the warmth of the hands that made them. It's little kitchen secrets—like the one, according to legend, that the inventor of the Caesar salad's Italian mother passed on to him. "Caesar," she used to tell her son (his name was Caesar Cardini, and the salad was later named in his honor), "my dear boy, make sure to dip the eggs for the sauce into boiling, but not bubbling, water for exactly one minute. That way, no salmonella will ever get you!" The obedient son followed his mother's advice—and eventually became a culinary icon of his generation, the creator of the famous salad, and a very wealthy man. Cut the crust off the baguette.
