Salad by Jamie Oliver

Description

This recipe won't take much time. As always, Jamie breaks the stereotypes with his version of "Caesar." Far from the light, almost weightless classic, he doesn't just add chicken to the salad—he roasts entire chicken legs, as he believes chicken breast is too dry for this dish! And croutons? Do you think he'll drizzle bread with oil and lightly toast it in the oven until golden? No way—Jamie isn't like that. He lines the bottom of the pan with bread, then places the chicken legs right on top. The chicken becomes more tender and juicy, while soaking the bread with its juices and fat. Later, they swap places so the croutons can get nicely browned. Oh, and bacon will be frying on top too, while the salad itself is garnished with violets! Despite all these deviations from the classic version, Jamie Oliver's Caesar salad recipe isn't particularly complicated. The result, however, is simply stunning. Serve it at the table.

Instructions

  1. 1

    Step 1

    Step 1

Rub the chicken legs well with salt, pepper, and rosemary.

  2. 2

    Step 2

    Step 2

Place the bread at the bottom of a frying pan or ovenproof dish, then put the chicken legs on top. Bake until done—if clear juice runs out when pierced with a fork, it's time to remove.

  3. 3

    Step 3

    Step 3

    The legs should brown nicely!

  4. 4

    Step 4

    Step 4

Remove the bread from the pan; it should be well soaked with juice and fat. Tear it into pieces and place it on top of the chicken. Then place bacon slices on the bread. Return to the oven until the bacon becomes crispy.

  5. 5

    Step 5

    Step 5

While the chicken, bread, and bacon are in the oven, you'll have just enough time to wash, dry, and tear the salad leaves by hand.

  6. 6

    Step 6

    Step 6

And make the sauce – to do this, mash the anchovies with garlic.

  7. 7

    Step 7

    Step 7

Add sour cream, grated Parmesan (half of the total amount), juice of half a lemon, and olive oil. Blend until smooth.

  8. 8

    Step 8

    Step 8

Separate the chicken meat from the bones using two forks, then roughly chop it with the croutons and bacon using a knife.

  9. 9

    Step 9

    Step 9

Mix and place on lettuce leaves. Drizzle with sauce (you might not need all of it!), toss again, and sprinkle the remaining Parmesan on top. And if you're expecting someone special—your mom or a friend—garnish the salad with violets! Jamie Oliver's "Caesar" is ready!
