Perfect for everyday dining. This healthy and easy-to-prepare Uzbek dish—achichuk salad—will delight everyone. In its homeland, it is traditionally served with plov, as the fresh, invigorating vegetables pair wonderfully with rich, fatty meat dishes. Garnish as desired and serve.

Step 1

To prepare the "Achichuk" salad, use ripe, firm, and meaty tomatoes. Wash the tomatoes and cut them into small pieces.

Slice Crimean red onion into very thin half-rings. Marinate the onion in 2 tablespoons of wine vinegar, adding 1 tablespoon of sugar. Let it marinate for 10–20 minutes. Rinse the onion under running water and squeeze out the liquid.

Combine the chopped tomatoes and marinated red onion in a bowl.

Add chopped red chili pepper. If you prefer to avoid spicy food, you can omit the pepper. Add chopped fresh herbs, basil.

Dress the salad with a dressing made from vegetable oil, a little wine vinegar (a few drops), salt, a pinch of sugar, and ground black pepper. Mix the salad well and serve.
