
Fish soup with zucchini
Description
Perfect for lunch. The base for zucchini fish soup can be water, vegetable broth, or fish stock, depending on your taste preferences. You can also add other ingredients such as carrots, peppers, and fresh herbs. 1. Pour water into a saucepan and place over heat. 2. Wash salmon fillet (you can use white fish if preferred), pat dry with a paper towel, and cut into small cubes. 3. Add salt and pepper to the boiling water, then add the fish. 4. Slice leek thinly and add to the pot. Another way to make the fish soup with zucchini richer is to sauté the vegetables in a small amount of vegetable oil beforehand. 5. Wash and chop spinach, then add to the pot. 6. Wash zucchini (or courgette), pat dry, and slice thinly into strips (a vegetable peeler works great for this). 7. Add zucchini to the soup and simmer over low heat until tender. Before serving, you can add a splash of cream and a pinch of your favorite herbs to the homemade fish soup with zucchini.
