
Marseille-style fish soup
Description
Perfect for lunch. Bouillabaisse is the most popular dish of Provençal cuisine. Serve with herbs and sour cream.

Step 1

Finely chop the onion, a few garlic cloves, carrot, leek, and dill. Blanch the tomatoes, peel them, and cut into cubes. Heat olive oil in a pot and sauté the onion. Cut the sea fish fillet into pieces and sprinkle with lemon juice. When the onion becomes soft, add the garlic and chopped vegetables. Add orange zest and saffron, and cook for about 15 minutes. Pour in 2 liters of water, add the fish heads, and bring to a boil.

Strain the broth, add fish fillet, pour in wine, and cook for another 15 minutes. Add seafood 5 minutes before the end of cooking.

While preparing the soup, make croutons. Slice the garlic and pepper, mix with butter, and spread onto the bread. Bake the croutons in the oven, then add them to the pot.

Sprinkle the soup with dill. Croutons can be served either in the soup or separately.
