
Fish soup with yellowtail head and vegetables
Description
The recipe won't take much time. You can use not only escolar but any other sea fish of your choice for this fish soup. Feel free to select your preferred herbs—basil, as in this recipe, or dill. The vegetables give the finished dish a pleasant taste and aroma, resulting in a simple yet very delicious soup. Ladle into bowls and serve.

Remove the gills. Rinse the fish heads in cold water.

Place the fish in cold water, put on the heat, bring to a boil, and skim off the foam.

Add bay leaf and basil sprigs.

Next, add salt, dried herbs with root vegetables, and whole peppercorns. This seasoning gives the broth a pleasant aroma.

Add vegetables to the boiling fish broth: finely chopped potatoes and carrot slices.

After 10 minutes, add leek and bell pepper. The leek should be sliced into thin rings, and the pepper cut into small cubes.

Cook the fish soup until done. Remove the bay leaf and basil sprigs. Take out the fish heads and debone them. Put the pieces of fish back into the soup, and discard all inedible remains.
