
Fish solyanka
Description
A hearty first course. You can choose any fish you like. But be sure to use both raw and lightly smoked fish—this will bring out the flavor of the solyanka. Green olives can be added to taste. Serve with fresh herbs and sour cream.

1. Prepare the necessary ingredients.

2. Boil the pink salmon with allspice in a liter of water until cooked.

3. Cut the potatoes into medium cubes.

4. Finely dice the onion and sauté until half-cooked.

5. Add the tomato paste and heat for 3 minutes.

6. Cut the cucumbers into small cubes. Transfer to a saucepan, pour in the brine to cover the cucumbers, bring to a boil, simmer for 3 minutes, then remove from heat.

7. Strain the ready broth and flake the fish into large pieces. Bring the broth to a boil and add the potatoes. Cook until done.

8. When the potatoes are ready, add the boiled pink salmon, cleaned saury, and the onion with tomato. Bring to a boil.

9. Add the cucumbers and bay leaf, mix and bring to a boil again.

10. Turn off the heat, cover with a lid, and let it sit for 20 minutes. Then serve with fresh herbs and sour cream. Enjoy!
