
Russian soup with meatballs
Description
A hearty first course. One of the most beloved homemade soups is meatball soup. Meatballs are most commonly used as a soup ingredient. Many people prepare meatballs in advance and freeze them. This saves considerable time later: making soup with meatballs will take no more than fifteen minutes. Juicy meatballs can nicely complement soup made according to any recipe—vegetable, grain-based, meat or fish soup. Serve the soup hot.

1. Place a pot of water over heat, bring to a boil, add rice and cook over medium heat. Cut the peeled potatoes into small cubes and add to the water.

2. In a separate bowl, mix the ground meat, fresh parsley, dill, salt, and pepper. Heat one tablespoon of olive oil. Shape the mixture into meatballs and fry them in a skillet until browned, about 5 minutes.

3. Add the meatballs to the water and cook over medium heat.

4. In a frying pan, sauté the chopped onion and carrot in oil. Make a sautéed mixture.

5. Add the sautéed mixture to the soup. Bring it to a boil, then serve, garnished with dill and parsley.
