
Russian cabbage soup with fresh cabbage
Description
The recipe won't take much time. It can be modified according to each cook's preferences. Those who prefer more sour shchi should use sour (fermented) cabbage; soup made from fresh cabbage will be less sour. Serve it hot, with fresh herbs and sour cream. Serve the soup hot.

Step 1
Peel the onion and cut into cubes. Wash the cabbage and shred. Peel the carrots and grate on a coarse grater. Finely chop the celery stalk.

On a heated skillet, sauté the onion until soft, then add the cabbage, carrots, and celery, and continue cooking for another 3-5 minutes.

Transfer the contents of the skillet to a pot, add bay leaf, salt, and pour in water or broth.

After boiling, reduce the heat and cook for 15-20 minutes. Peel the potatoes and cut them into cubes.

Add the potatoes to the pot and cook for 10-15 minutes after boiling. Cut the tomatoes into small pieces and add them to the soup.

Turn the heat to minimum and simmer for 5 minutes, add salt and ground black pepper to taste.

Turn off the heat and cover the soup with a lid, let it steep for a while. Then ladle into bowls and garnish with finely chopped dill.
