
Rice soup with Parmesan

Let's not radically change the menu—instead, let's prepare the familiar, simple rice soup for lunch, adding just one ingredient—Parmesan! The taste and aroma of the soup will become completely new, believe me. Here's how: pour into bowls and serve.

First, we'll prepare the chicken broth. I have leftover bones from a chicken breast, to which I add a small onion and a carrot, then pour in water.

The broth is ready, discard the onion and carrot, remove the remaining meat from the bones, and return it to the pot.

Peel and cut the potatoes into small cubes. It is advisable to rinse the rice thoroughly.

Add the rice and potatoes to the boiling broth. Season with salt.

To avoid overpowering the aroma of Parmesan, I didn't add any spices except black pepper. Cook the soup until the rice and potatoes are done.

Grate the Parmesan on a fine grater.

Pour the soup into bowls (the soup will be quite thick) and sprinkle with Parmesan.
